Preheat the oven to 180°C/350°F/Gas 5. Cook the Gosh! Sweetcorn & Quinoa Bites for 15 minutes. Meanwhile, make the BBQ sauce by whisking all the ingredients together.
To assemble the tacos, layer each shell with salad leaves, sliced avocado and chopped tomatoes. Load the Gosh! Bites on top and generously drizzle with the BBQ sauce. Finish with the coriander, chilli, spring onion and a squeeze of lime.
